As your cities grow in Dawn of Discovery, your people demand more and different kinds of resources. The richest people, the higher classes who pay the most in taxes, aren't content with eating fish and bread, even if you also provide them with spices and beer. They also want steak. That's where cows come in. The above screenshot shows several pens of lowing brown cows.

Sometimes a tiny cowherder comes out of the barn with a stick. She tromps up to a cow and swats it in the flank with a stick. The cow obligingly marches into the barn. It is never heard from again.

However, cows are relatively boring. The middle class need pigs for their skins. The pigs are much more lively than the cows. Zoom in and you'll occasionally see the little guys roll over and wallow merrily in the mud. They even have little piglets trotting around.
